Burrito Grilled Cheese
Cheddar cheese, grated
Cumin, oregano, salt & pepper, optional
Salsa, sour cream & guacamole, optional
Melt butter in a pan or griddle over medium heat. Start to toast two slices of bread on the pan, and then flip them over. Spread one slice with refried beans. You may add the spices to the beans beforehand if you like. Sprinkle the cheese over the beans, and top with the other slice of bread. Flip the whole sandwich. Cover with a pan lid to keep the heat in. Check the sandwich and flip again. When done, slice into four strips. Dip in salsa, sour cream or guacamole, or enjoy on its own.
